Recipe: Beef and Eggplant 7/19/2009 Category: Main Dish Author: 5 Stars Beef and Eggplant Cooking Time: 3+ hrs 1 lb cubed beef corn oil onion cinnamon nutmeg salt 2-3 cans of tomato sauce 1 cup water 2 tbsp lemon 1 cup water 1 large eggplant Stew the meat in a crockpot for several hours until soft. Then sautee beef w/ oil, onions, and spices - add to taste. When dry add tomato sauce. When becomes pasty add 1 cup of water and lemon When water boils down add 1 more cup of water Add more seasoning to taste. Cover. Simmer until meat is tender. Keep stirring it and adding more water as needed - but it should not be too watery. Peel the eggplant. Cut in half lengthwise. Cut into thin slices approx. a quarter inch thick. Fry eggplant in margarine until brown In a 9x13 baking dish lay out the cooked eggplant. Pour stewed meat on top. Optional: Cut a tomato thinly and lay on top. Bake 350 degrees for 30 minutes.
