Recipe: Egg Rolls OMG the Bomb! 7/19/2009 Category: Main Dish Author: 5 Stars Important: When you wrap there must be NO holes! And the ends must be tucked in so you can't see the inside! Or else oil will leak in and ruin the flavor, make it all greasy, and soggy! :( Best Egg Rolls Makes 12 egg rolls Stir fry in a frying pan: Shred Cabbage (use food processor) Bean Sprouts Pre-cooked Pork (opt) 2 tsps soy sauce 1/2 tsp salt fresh grated ginger green onion (opt) Set aside in a sealed tupperware. Make egg roll wrappers: 2 egg, beatens 1 tsp salt 2 cup cold ice-water (drain through ice) 1 1/2 cup flour 1 tsp peanut oil for each wrapper (important use peanut oil necessary for right flavor!) 1 egg, beaten (for sealing) Corn Oil (for deep frying) Mix first three ingredients. Then add 1/4 c. flour at a time beating it with a mixer. Consistency needs to be thin like crepes - add more ice-water as necessary. Fry each wrapper in 1 tbsp peanut oil. Roll mixture into wrappers like a burrito. Seal edge with a beaten egg. NO HOLES!!!! Deep fry in corn oil until golden crispy. Enjoy!
