Almost Perfect Fried Chicken: Results: Perfect crust Perfectly cooked inside Lacking: Tang Not enough Seasoning/Salt Recipe: 1 chicken breast - semi-deboned Ground thyme Ground sage Onion Salt Oregano Pepper Flour Instructions: Semi-debone chicken breast Wash chicken, set aside With a teaspoon mix all spices in a bowl Use teaspoon to spoon spice directly onto chicken. Pat it in with the bottom of the spoon. Make sure the entire chicken is covered with spices. It should look completely green. Set aside. Pour flour onto a plate. (Do not add season to the flour) Heat up oil. On our stove this is literally dead center medium heat! Important NOT medium-high and NOT high!!! Dip chicken into flour. One well coat. (Only coat once!) Place directly into heated oil and fry approximately 12 minutes if only cooking one half breast. Flip every couple minutes, especially if it is not fully submerged in the oil. Note: It did NOT require a milk/egg wash coat -------- Next time changes try make: Add more seasonings - more of everything plus add a few more herbs not enough layers of herbs - almost! add some adobo and add salt this time too not just onion salt Add vinegar to the chicken while it's sitting waiting to be coated - I think this will give it the tangy flavor I want! also can try adding just a couple drops of lemon juice instead of vinegar - but a couple times ago when I made it the tang was nearly perfect and the only way I could've gotten that tang was with the onion salt or with vinegar and since this time even though I added a LOT of onion salt and got no tang flavor it leads me to conclude it must have been the vinegar. Now I can't remember if it was white vinegar or red wine vinegar - as we were either just out or nearly out. So try vinegar before you try lemon!!!! And it was tangy but not enough tang that time and usually I only add about 1/2 tsp of vinegar to 1/2 cup milk with 1 egg white - so I need to increase the amount of vinegar - should be able to just pour it directly onto chicken next trial because I am not using milk/egg wash! maybe make my own flavored vinegar: white vinegar + lemon or orange flavor. Possible seasonings to add: marjaram rosemary basil garlic adobo crushed coriander seeds Try mixing them with previous seasonings and then taste with finger to see if it tastes right!!
