Spaghetti Sauce:

Place all spices on low heat to get them to increase in flavor:

Oregano
Italian seasoning
Sage, ground
Rosemary
Basil
Cilantro - coriander - use dried seed version, smash it with a cup
10 garlic cloves

4.5 to 5 lbs. of sausage
1 chub of hamburger meat (over 20% fat)
Olive Oil for Cooking
3 onions
3 large cans Tomato Sauce
5 large cans Tomato Paste
7 large cans Tomato Puree/Crushed Tomatoes
Adobo
Red Wine
Sugar

Cook sausage and hamburger without oil.  Season with adobo. Important save oil to add later - Drain into a pot. 

Chop and sautee onions. Olive oil needs to be hot first or onions will soak up oil. Season with adobo.

Remove onions.

Chop garlic with little food processor.

Sautee spices and Garlic - on low!

Open all cans of tomato sauces and add to spices in big pot. Add onions. Then add meats. 

Add more spices as you go until flavor is getting closer. 
Then add a little wine and sugar. 

Cook for a while so flavors get soaked in. Taste. 

Add more seasoning as necessary.
