Lemon and Vanilla Panna Cotta Prep time: 15 minutes Ingredients: * 1 envelope unflavored gelatin * 2 cups 2% milk * 2 tablespoons 2% milk * 1/2 cup sugar * 2 teaspoons vanilla * 2 cups plain fat-free yogurt * 1/2 teaspoon lemon juice - measure it exactly * Lemon Zest - about 1/3 of a lemon Serve with blueberry sauce on top!!! Important!!! Preparation: 1. Sprinkle gelatin over 2 tablespoons of milk in small bowl; let soften 5 minutes. 2. Place remaining 2 cups milk, sugar, and vanilla in a saucepan. Bring mixture to simmer; remove pan from heat. 3. Add gelatin mixture to saucepan and stir until dissolved. 4. Place yogurt in medium bowl; whisk until smooth. 5. Gradually whisk milk mixture and lemon and zest into yogurt. 6. Pour mixture into tupperware. Chill until set, about 4 hours. 7. Scoop into bowls. Top with blueberry sauce. Yield: 8 servings
