3/4 cup red wine vinegar 1/8 cup bacon drippings 1/4 cup oil 1/2 cup green onions, chopped 1/4 cup sugar 1 pound fresh spinach 10 slices bacon, cook and crumble it 1/2 Sweet White Onion 1/2 Purple Onion Feta Cheese Walnuts Directions: Cook bacon - set aside bacon but save drippings! Toast walnuts in oven. Sautee Purple and Sweet White Onions together. Bring vinegar, bacon drippings, oil and green onions to a boil. Add sugar and boil, stirring constantly until sugar is dissolved. Add crumbled bacon. Pour this hot dressing over spinach and toss. Add sauteed onions, walnuts, feta cheese and toss once more. Mmmmm YUMMY!!! You will enjoy this!
