Fig Newtons (makes a square pan size) FOR DOUGH: (this cookie dough is great ponder on other uses! almost like a shortbread) 1.5 cups all-purpose flour 1/4 cup sugar 1/4 tsp. salt 1/3 tsp. baking powder 1/3 tsp. baking soda 1/4 tsp. cinnamon 6 tbsp. (3/4 stick) butter, slightly softned 1 egg FOR FILLING: 1/2 cups figs, pureed in blender 1/4 cup lemon juice 1/4 cup apple juice 1 tsp. ground cinnamon 1/4 cup sugar Blackberry jam (or another favorite jam of yours) Directions Preheat the oven to 375F. FOR DOUGH: Combine the dry ingredients. With fork mix in butter. Then add egg. Split dough into 2 ball. Roll out one ball. Spray square pan. Place rolled dough on it. FOR FILLING: Puree figs in blender - add apple juice to it so it will blen.d Then pour this and remaining filling ingredients into a saucepan and cook until mixture is thick. Stir during cooking. Spoon the fig filling on the dough. Then add a layer of your favorite jam on top. Next roll out the second layer of dough and place on top. Bake until light golden brown, about 15 minutes.
